Fasiago is a wonderful blend of tangy Asiago and creamy aged white cheddar. It is easy to slice and shred like cheddar with the nutty, salty flavor of a traditional Asiago. It has a sharp bite which is very much complimented by the sweet, bright flavor of chardonnay.
Chardonnay wines boast an impressive range of flavors from the expected buttered, oak influences to the fresh, fruit flavors of apple, pear, tropical fruits, citrus and melon. With Fasiago being such a bang to your palate, a crisp chardonnay balances the flavors. The two together leave a lasting palate impression.
Wine and Cheese Pairing Tip:
If you prefer a big buttery Chardonnay then look for ones that have been through malolactic fermentation, as they will yield the compound diacetyl, which gives it that buttery taste and smell!
