Bacon-Wrapped Chorizo Cheese-Stuffed Hot Dogs

Ingredients:

2 lbs Ground Chorizo

1 lb Sliced Bacon

1 – 6 oz Block of Gold Creek Farms Cheddar of Your Choosing (we used the Sriracha Cheddar in ours 🌶️)

8 Hot-Dog Buns (we used the brioche variety! 🧈)

Cilantro Lime Crema: 

1 Cup Mexican Crema

3 TBS Fresh Cilantro, Finely Chopped

1 TBS Lime Juice

Zest of Half a Lime

Salt

Garnish: 

Pickled Red Onions

Directions:

For the Cilantro Lime Crema, purée the crema ingredients in a food processor until thoroughly combined. Season with salt to taste. Refrigerate until ready to use.

Slice Gold Creek Farms’ cheddar block into 8 strips (we cut four chunky strips and then cut each of those horizontally in half, totaling 8 strips). Section chorizo into 8 equal pieces (each should weigh approximately 4 ounces). Take one of the eight pieces of cheese strips and wrap it with one of the eight pieces of chorizo, forming a “hot-dog” like shape. Ensure it is formed tightly, so the chorizo won’t break and allow the cheese to melt-out while cooking. Wrap the chorizo dog with a slice of bacon and use a toothpick to secure the loose end of the bacon. Repeat until all eight chorizo dogs are formed. Place them on a dinner plate and allow to cool in refrigerator for at least 45 minutes.

Bacon Wrapped Chorizo Cheese Stuffed Hot Dogs

While the chorizo dogs chill, make sure your grill is nice and clean and oil the grates with a high temperature oil (like canola or vegetable oil) to prevent the bacon from sticking. Next, preheat your grill on medium high (around 375 degrees F) using the two zone cooking method.

Add the chorizo dogs to the hot side of the grill and sear the bacon (about 1 minute on each side, depending on how hot your grill is). Make sure you rotate the dogs to ensure all sides are crispy. Move the chorizo dogs to the cooler side of the grill and close the lid. Cook for 15-20 minutes or until the chorizo dog reaches an internal temperature of 165 degrees F.

Place a chorizo dog on a bun and drizzle with the Cilantro Lime Crema. Garnish with pickled red onions and enjoy!
