Spring Green Pasta Salad with Feta and Parmesan
This Spring Green Pasta Salad with our crumbly Feta and nutty Parmesan is perfect for a March St. Patrick’s Day or Easter side-dish. Sweet peas and salty feta make this salad absolutely delicious. We hope it’ll make it to your springtime gatherings.

Ingredients:
1 Pound Cavatappi Pasta
1 TBS Olive Oil
1 Cup Gold Creek Farms Feta, crumbled
1/3 Cup Gold Creek Farms Parmesan, finely grated
1 Cup Frozen Peas, defrosted and drained
1 Cup Snap Peas, cut on a bias
1 Cup Deli Ham, sliced into squares
1/2 Red Onion, thinly sliced
Dressing:Â
1 Cup Fresh Pesto
3/4 Cup Mayonnaise
2 TBS Red Wine Vinegar
1/2 TSP Salt and Pepper
Directions:
Cook the cavatappi in a large pot of boiling, salted water until fully cooked (10 to 12 minutes). Drain and toss into a large mixing bowl with the olive oil. Cool to room temperature.
For the dressing, purée the pesto, mayonnaise, red wine vinegar, and salt and pepper in a food processor until smooth.
In the large mixing bowl, add the dressing to the cooled pasta along with the Gold Creek Farms’ Feta and Parmesan, peas, snap peas, deli ham, and red onion. Mix well until everything is thoroughly coated and season with salt and pepper to taste. Enjoy!
