Spinach Alfredo Open-Faced Sandwich with Smoked Romano
One of our favorite Smoked Romano pairings is spinach! Its’ smoky, sharp flavor highlights the earthy notes of one of our favorite superfood greens (spinach!). This is an easy, fun recipe for kids to help with and it gets them to eat their greens. We hope ya’ll enjoy it, too.

Ingredients:
2 Cups Alfredo Sauce (homemade or store-bought to save time)
4 Cups Fresh Baby Spinach
1 – 14 oz Fresh Bakery Bread Loaf, Sliced (we love the Rosemary Olive Oil one for this recipe!)
1 tsp Dried Italian Seasoning
2 Cups Rotisserie Chicken, Shredded
2 Cups Gold Creek Farms Aged White Cheddar, Shredded
1/2 Cup Gold Creek Farms Smoked Romano, Finely Shredded
Directions:
Preheat oven to 400 degrees F. Place Alfredo sauce in a pot over medium low heat and bring to a simmer. Add the spinach and stir until just wilted. Add chicken and Italian seasoning and toss to coat in sauce. Turn off heat. Mix shredded Gold Creek Farms Aged White Cheddar and Smoked Romano in a separate bowl. Our Smoked Romano is quite sharp, so we like to use the Aged White Cheddar to cut the richness and add some melty creaminess, too.
Lay each bread slice on a sheet pan. Cover each bread slice with an equal portion of sauce mixture and top with cheese mixture. Bake until the cheese is melted and golden brown (5 to 10 minutes). Serve warm.
