Parmesan Chicken Caesar Salad

Our Parmesan is the star of this simple, clean Chicken Caesar Salad. It is made entirely from scratch and the freshness shines through! ☀️

Dressing:

1 TBS Dijon Mustard

2 Large Garlic Cloves, Crushed

1/4 Cup Fresh Lemon Juice

1 TBS Caper Juice

3 Anchovy Filets

1/4 Cup Finely Shredded Gold Creek Farms Parmesan (Reserve the Remaining Block for Further Use)

2/3 Cup Olive Oil

Salt and Pepper to Taste

Chicken:

4 Chicken Breasts

2 TBS Olive Oil

1 TBS Garlic Salt

2 tsp Fresh Cracked Pepper

Croutons:

3 Cups 1-Inch Cubed Sourdough Bread

4 TBS Melted Butter

1 TBS Finely Chopped Parsley

Salad:

2 Heads Fresh Romaine, Sliced Crosswise into 3/4 inch strips

Directions:

Make the dressing: In the bowl of a food processor, add the mustard, garlic, lemon juice, caper juice, anchovies, and a pinch of salt and pepper. Blend until smooth. With the machine running, pour in the olive oil until emulsified. Transfer the dressing to a bowl. Taste and (if needed) add more salt/pepper. Refrigerate until ready to use.

Make the croutons: Preheat oven to 375 degrees F. Arrange the bread cubes on a baking sheet and drizzle with melted butter. Place the tray in the center of the oven and bake until browned and toasty (10 to 12 minutes). Grate Parmesan directly over the croutons, sprinkle with parsley and salt, and lightly toss to coat.

Season and cook the chicken: Heat a skillet over medium-high heat. Add the olive oil. While the oil is heating, arrange the chicken on a tray, mix garlic salt and pepper in a bowl, and season chicken on both sides. Add the chicken to the heated oil. Allow the first side to fully brown (3 to 4 minutes). Flip the chicken to its second side and brown and cook through (3 to 4 additional minutes). Set chicken aside to rest for 5 to 10 minutes.

Assemble the salad: In a large mixing bowl, add 1/4 cup of the dressing. Add the romaine and toss well to coat. Grate a generous amount of Parmesan over the lettuce and add the croutons. Gently toss, transfer to a serving bowl and top with more Parmesan. Why not?!

Transfer the chicken to a cutting board and cut crosswise into 1/4-inch slices and divide among the plates. Pile salad next to the chicken on the plates and drizzle with more dressing. Serve and be prepared to fall into Parmesan love! 💕
