Three Easy, Cheesy Snacks

More than likely your kids have been back in school for a couple weeks, or you may be looking for a fresh, new idea for an after work snack yourself. Whatever the reason, we hope you enjoy these easy, cheesy takes on snack-time!

 Three Easy, Cheesy Snacks 1

Romano Kale Chips 

Ingredients:

1 Large Bunch of Kale

Gold Creek Farms Romano, Freshly Grated

Salt

Olive Oil

Directions:

Preheat oven to 350 degrees. Line two sheet pans with parchment paper. Using a sharp knife, cut and remove the hard rib from the center of each kale leaf. Place remaining leaves on sheet pans, brush with olive oil, sprinkle with salt, and bake for 10 minutes, until crispy. Remove from oven and sprinkle with Romano. Bake for an additional 5 minutes, just enough to slightly melt the cheese so it will stick to kale chip. Cool and serve!

Bacon Chive Cheddar Roll-ups

Ingredients:

2 Large Spinach Tortillas

3 Tablespoons of Cream Cheese

¼ Cup of Sliced Banana Peppers

¼ Pound of Thinly Sliced Ham

1 Cup of Gold Creek Farms Bacon Chive Cheddar, Freshly Grated

Directions:

Place tortillas on a flat surface and spread each with half of the cream cheese. Place a thin layer of ham over the cream cheese, leaving 1 inch of outer edge bare. Place banana peppers down the center of each tortilla, sprinkle with Bacon Chive Cheddar, and tightly roll the tortillas. Slice each log into 10, 1 inch slices.

Broccoli and Cheese Bite Snacks

Ingredients:

2 Cups of Chopped Frozen Broccoli, Defrosted and Drained

2 Large Eggs

½ Cup of Gold Creek Farms Parmesan, Freshly Grated

½ Cup of Bread Crumbs

½ Teaspoon of Salt

2 Tablespoons of Olive Oil

Directions:

Combine broccoli, eggs, Parmesan, bread crumbs, and salt in a food processor. Pulse until all ingredients are finely chopped. Using one tablespoon at a time, form into balls. Heat olive oil in a skillet, and drop the balls into the pan. Softly flatten each ball with a spatula and cook until both sides are golden brown and crispy.
