Spinach Feta Cheese Bread


¾ Cup of Sour Cream

½ Cup of Vegetable Oil

2 Eggs

5 Ounces of Chopped Frozen Spinach, Defrosted and Drained

1 Tablespoon of Minced Garlic

4 Ounces of Gold Creek Farms Feta, Crumbled

1 ¾ Cup of Flour

1 Tablespoon of Sugar

1 ½ Teaspoon of Baking Powder

1 Teaspoon of Lemon Zest

½ Teaspoon of Both Salt and Pepper

¼ Teaspoon of Baking Soda


Preheat oven to 350 degrees. Line a 9” x 5” loaf pan with parchment paper, leaving an overhang on both sides. Coat well with cooking spray. Whisk sour cream, vegetable oil, eggs, spinach, garlic, and Feta until fully combined. In a separate bowl, whisk flour, sugar, baking powder, lemon zest, salt, pepper, and baking soda. Fold the wet ingredients into the dry ingredients. Place into a bread pan. Bake 40 to 50 minutes (until top is golden brown and a toothpick will come-out clean). Let cool for 1 hour, and then package your gift in cellophane with a pretty, colored ribbon. Voile!

Cherry Sage Cheddar Pastry Bites


4 Ounces of Dried Cherries

4 Ounces of Cherry Sage Cheddar, Freshly Grated

2 Cloves of Minced Garlic

Pinch of Both Salt and Pepper

1 (10 inch x 9.5 inch) Piece of Puff Pastry (Found in the Freezer Section)

Preheat oven to 375 degrees. In a bowl, mix dried cherries, Cherry Sage Cheddar, minced garlic, salt, and pepper. Lightly flour a clean, dry surface. Layout the puff pastry atop the floured surface. Flour the top of the dough. Roll out the puff pastry until it is about half as thick (about 1/8 an inch and about 24 inches x 12 inches). Trim edges to size, if necessary. You want your puff pastry to form a rectangle. Cut into 3 inch x 3 inch squares. Make sure the squares are floured well and stack them into a pile. Fill a dish with room temperature water. Place two teaspoons of your cheese mixture in the top half diagonal of one of your squares. Dip your finger into the water and run it along the edge of the square to moisten the edges. Fold the bottom half over the top half. This will form a triangle. Use a fork to seal the edges. Place the finished triangle pockets onto a non-stick baking sheet. Bake for about 15 minutes, until golden brown and puffy. Let cool for about an hour. Place six or so into a cellophane bag, tie with ribbon, and happy gifting!
