Easy, Light Summer Recipes
Diet trends come and go, but cheese is here to stay! According to the USDA, Americans are predicted to consume at least 5% more cheese in 2016. If you are like me and love cooking with cheese, then you will love the following recipes. They are perfectly light for hot summer days!
Aged White Cheddar Crisp
It’s gluten-free, and a perfect light snacking option!
4 TBS of shredded Gold Creek Farms Aged White Cheddar
If you want more flavor, try our Bacon Chive Cheddar or Truffle Cheddar as a substitute for our original Aged White Cheddar. They are all delicious!
Preheat oven to 375 degrees. Line a cookie sheet with parchment paper. Drop a tablespoon of shredded cheddar into four separate piles. Make sure they have at least 2 inches of space in between, as they are about to melt and spread-out! Bake for about 10-15 minutes, or until golden brown. Remove from oven and let cool for 10-15 minutes. Remove from cookie sheet with a knife. Yum!
Chickpea and Avocado Salad with Feta
Low in calories, but packed with protein. What a perfect lunch before an afternoon mountain bike ride or evening run!
1 Can of Chickpeas, Rinsed and Drained
2 Diced Avocados
1/3 Cup of Chopped Parsley
2 TSP of Thinly Sliced Green Onion
1/3 Cup of Gold Creek Farms Crumbled Feta
Juice of 1 Lime
Salt and Pepper
Combine all ingredients in a large bowl and gently stir to combine. Make sure you do not mash the avocadoes and feta. Season with salt and pepper (to taste). Now you are ready to move mountains!
